Abstract

This bulletin explains the use of flour substitutes in baking bread. The use of 20 per cent substitute in the place of wheat flour during the whole period of the 1917 crop would have permitted the saving of nearly 100,000,000 bushels of wheat. This amount could be made available to our soldiers and allies in Europe.
